Traditional Hommos



This take on the classic Middle Eastern dish of Hommos is a very traditional recipe, because well... why mess with a classic? It's been perfected by just about every Middle Eastern culture over many hundreds, if not thousands of years!


1 tin chick peas, drained

3 cloves garlic

2 tbsp olive oil

¾ tsp  citric acid (careful not to add anymore as it will be overpowering)

1 tsp salt

½ cup tahini paste

210 mls boiling water

Step one  - Tahini sauce

The first step is to make 'Tahini sauce' which by the way is delicious by itself drizzled onto Pepper Tree Fine Foods 'Falafel croquettes'.


Place garlic, salt, olive oil, and the boiling water in to a large jug or medium size bowl and blend. Then add tahini paste, blend. Then add citric acid. Blend until smooth. 

TIP: You can take a few tablespoons out and set aside to drizzle over falafel. If it’s too thick add a little amount of boiling water to make a thick sauce.

Step two - Combine with chick peas

Add the tin of drained chick peas to the tahini sauce and blend until smooth and creamy.

To serve

Spread Hommos with a spoon in a round shape on a plate and drizzle with olive oil, paprika and a few Kalamata olives on top. Hommos is traditionally served with falafel balls drizzled with Tahini sauce. Serve with warm pita bread and enjoy.
